Chicken and Broccoli Stir Fry Meal Prep

This easy stir fry can be made ahead of time in large quantities for your weekly meal prep.


Ingredients:

 2 tbsp olive oil
 2 garlic cloves minced
 2 lbs chicken breast thinly sliced
 8 cups broccoli florets
 4 carrots peeled and thinly sliced
 4 scallions thinly sliced
 4 cups of cooked brown rice

FOR THE STIR FRY SAUCE
 4  tbsp oyster sauce
 2 tsp low sodium soy sauce
 2 tbsp sesame oil
 2 tsp freshly grated ginger
 2  tsp sriracha sauce
 3 tsp cornstarch

Directions:

1. For this recipe you will need a very large wok or skillet, or you can make it in two batches, otherwise your ingredients will not all fit. In a small bowl, add all the stir fry sauce ingredients and whisk together.

2. Add oil and garlic to your pan and bring to medium high heat. Once oil is heated, add in chicken and cook until chicken is about 2/3 done.
